| Maker Comments | To honour the cultural connection between Jamaica and Toronto we have been on the look-out for a source of cacao from Jamaica for many years. Last year we connected with a wonderful plantation in St. Thomas Parish in the South East growing region of the island. This farm grows an exceptional crop of Trinitario beans that are carefully fermented and systematically dried. (Notes: ripe raspberries & wildflower honey.) |
