Maker Comments | In recent discoveries, Nicaragua has been found to be one of the few countries where Criollo varieties of cacao originated. These unique genetics along with meticulous, post-harvest processing is transforming Nicaragua into a hotbed for the world's finest flavored cacao. We carefully chose the Nicalizo heirloom cacao variety for our Signature Collection. We are enamored with its flavor complexity. The chocolate has fruit flavors of plum, cherry with rich buttery notes of toasted toffee, a little spice of pink peppercorn, and a lovely roasted walnut long-lasting finish. This truly is a special chocolate. |
