Maker Comments | Rabot Estate is Hotel Chocolat's own 130 acre cocoa plantation. The prime trinitario cocoa trees are rich in criollo genes and grow at high altitude in rich volcanic soil with plentiful rainfall. The Caribbean sea is visible from the estate slopes, nestling between the statuesque twin Piton mountains. A deep mahogany colour with initial red fruit flavour notes slowly diminishing to leave Shiraz, black olives and spices. Exceptionally long in the mouth. |
