Frittata, Artichoke
Ingredients:
- 8 eggs
- salt and fresh pepper
- dash Tabasco
- 10 soda crackers
- 1 pound cheddar cheese, shredded
- 2 bunches green onions, chopped
- 1 clove garlic, pressed
- 1/2 bunch parsley, chopped
- 3 jars marinated artichoke hearts, chopped
Directions:

In the oil from the artichokes, fry the onion and garlic until limp.
Beat the eggs, add soda crackers, salt, pepper and Tabasco.

Add parsley, grated cheese, crackers and the chopper artichoke hearts.
Drain onions and add to mixture.

Pour into a greased 8" x 12" pan for 35-45 minutes at 325 degrees until firm.
Cool and cut into squares. Can be frozen.
