Rhubarb Pie
Ingredients:
- 4 cups rhubarb, peeled and diced
- 1/4 cup flour (or 3 Tablespoons tapioca)
- 1 1/4 cups sugar
Directions:

Sprinkle rhubarb with water and cook until thick.

Mix dry ingredients together then blend rhubarb in gently. Let stand 15 minutes or more. Drain liquid.

Line a 9" pie pan with fresh pie crust. Spoon in rhubarb mixture. Dot with butter.

Cover with a lattice pie crust top.

Bake at 450° for 10 minutes, then reduce heat to 350° for 40 minutes or until golden brown.
