Caramelized Brussels Sprouts with Green Onions and Cilantro
Ingredients:
- 2.5 Tablespoons lime juice (freshly squeezed)
- 1 Tablespoon honey
- 1 Tablespoon light soy sauce
- 1 Tablespoon water
- 2.5 teaspoons fish sauce
- 1.5 teaspoons sambal oelek (hot sauce)
- 1 Tablespoon olive oil
- 1.5 pounds Brussels sprouts, trimmed and halved
- 2 Tablespoons butter
- 1 medium shallot (minced, or 2 T minced onion)
- 1 1" piece fresh ginger, peeled & minced
- 1 clove garlic, minced
- 1/2 cup green onions, chopped
- 1/4 cup cilantro (fresh), chopped
Directions:

Combine first 6 ingredients in a bowl, stirring with a whisk; set aside.

Heat oil in a skillet over medium-high heat; add sprouts to pan. Cook 4 minutes or until beginning to brown.

Stir in butter; cook 4 minutes or until caramelized and crisp-tender.

Add shallot, ginger, and garlic to pan; cook 1 minute, stirring constantly.

Add lime juice mixture to pan; cook 3 minutes or until syrupy.

Stir in green onions and cilantro. Serve immediately.
