Directions:

  1. Preheat oven to 425° F.
  2. Slice the carrots and leeks on the bias. Cut up the peppers. Sauté the veggies together in butter. Season with salt and pepper.
  3. Spread the veggies evenly in a baking dish. Set aside.
  4. Mix cream and mustard (and optional dill) together in a small bowl.
  5. Wash salmon fillets and pat dry. Lay fillets on top of veggies. Cover the salmon evenly with cream mixture.
  6. Bake in oven for 30 minutes.
