Salmon Fillet in Veggie Sizzle
Ingredients:
- 4 small salmon fillets
- 2 large carrots, sliced on the bias
- 1 large leek, sliced on the bias
- 1 medium yellow pepper
- 1 medium red pepper
- 1 1/4 cups cream, heavy
- 1 Tablespoon ground mustard
- 2 Tablespoons fresh dill, chopped
- salt and fresh pepper
Directions:

Preheat oven to 425° F.

Slice the carrots and leeks on the bias. Cut up the peppers.
Sauté the veggies together in butter. Season with salt and pepper.

Spread the veggies evenly in a baking dish. Set aside.

Mix cream and mustard (and optional dill) together in a small bowl.

Wash salmon fillets and pat dry. Lay fillets on top of veggies.
Cover the salmon evenly with cream mixture.

Bake in oven for 30 minutes.
