Maker Comments | Ten years ago, I used cocoa beans from the Dominican Republic to make my very first chocolate. To my surprise, it tasted better than any dark chocolate I had ever tried. It inspired me to spread my wings into chocolate making. Last fall at the Salon du Chocolat in Paris, I met Charles, and ecologist like myself who founded Zorzal Cacao. Within a private reserve of mountainous rainforest in the Duarte province, Charles is demonstrating that organic cacao production can serve as an economic model to finance biodiversity conservation for birds and other wildlife.
