Maker Comments | Sambirano Grand Cru is a true origin fine chocolate - carefully crafted from this season's cocoa - we cultivate, select, ferment and dry the Criollo, Trinitario and Forastero cocoa beans in the beautiful forested plantations of the Sambirano Valley in north west Madagascar. The delicate flavours of the cocoa beans are dependent on the soil, sun, water and shade of the forest canopy, this changes with the seasons and from year to year. We take our beans to the high plateau of Madagascar, where we carefully roast the beans, conch for up to 72 hours, refine and temper to bring you a chocolate with notes of citrus, spice, wood and coffee that lingers on your palette. |
