Maker Comments | Ecuador is a country with the most cocoa beans classified as "fine cocoa", that is why we use native heirloom beans from sustainable cocoa farms in Ecuador. Vintage Plantations recognize that the cocoa bean flavor profile depends on the specific location of where they are grown. Therefore, we have developed a unique recipe to respect these flavor profiles. To balance flavor and high antioxidant activity, we blend two Ecuadorian cocoa beans: the "Homero Castro" and the "Arriba" varietals. Our cocoa beans come from Rancho San Jacinto, a farm certified by the Rainforest Alliance, the flavor is long, nutty, powerful with a clean finish. The farmer is involved in the whole manufacturing of his beans into chocolate to safeguard the aroma he developed during the fermentation process. |
