Corn and Black Bean Salad
Serves 10-15 people plus you'll probably have leftovers.
Ingredients:
- 4 ears sweet corn, freshly cut off the cob
- 2 cans black beans, drained and rinsed
- 1 red onion, diced
- 1 bell pepper (green), diced
- 1 bell pepper (red), diced
- 3 limes, juiced
- 1/4 cup cilantro (fresh), chopped
- 1-2 jalapeno peppers, minced (or Poblanos)
- 1 Tablespoon fresh tarragon, minced
- salt and fresh pepper
