About the Esmeraldas Bean. This bean comes from the Salazar family farm in Ecuador's Esmeraldas region. The family controls the entire post-harvest process resulting in an exceptionally flavorful bean. This bar has intense flavors of berry jam and classic cocoa, with a long, pleasantly tannic finish.

When we first visited farmer Vicente Cacep in Tabasco, Mexico, we were captivated by the rare white color and unique flavor of his cacao beans. Tasting notes: Creamy citrus & hazelnut.

Nicalizo is the first Nicaraguan bean awarded Heirloom Cacao status for its fine-flavor characteristics. We chose it for this limited edition bar because of its taste profile, which includes grapes and woody notes.

We discovered these fine flavor beans after a two-hour boat ride on the Ucayali River, one of the headwaters of the Amazon and birthplace of cacao.
